Saskatchewan Corn Bread

Hello
Welcome to my Mosaic Monday where while driving through the Bad Lands of Saskatchewan we made a Crock Pot Corn Bread.

Today's crock pot recipe is Corn Bread

Crock Pot Corn Bread
1c Yellow corn meal
1c flour
1/4 c white sugar
4tsp baking powder
1tsp salt
1c milk
1 egg
1/4c vegetable or corn oil

mix all dry ingredients together in one bowl, the corn meal, flour, white sugar, baking powder and salt.


Mix all your wet ingredients together in seperate bowl milk, egg and oil.
Make a well in centre of dry ingredients and dump in the mixed liquid


Mix just until wet but don't over mix


Pour into greesed crock pot

Bake on high for 2 hours or until tooth pick comes out clean

Slice and enjoy as a side or just along with a fruit and a cup of tea or coffee.

Oh YUMMY ! I like corn bread I have a non stick crock pot/slow cooker do I still have to grease it and what with may I ask if I do ? . Wonderful photos . Glad you guys are still have a fantastic trip . Thanks for sharing it all with us . Have a good day and happy trails !

What an extraordinary coincidence! I just came in from outside gardening in the early morning when it is cool to write to you and there was your comment! I only recently stumbled upon your blog through Mosaic Monday. Yesterday I looked at all the earlier posts. Canada is little known to me except the southwest coast near Vancouver Island. I am intensely interested in your trip. I think I like the prairies best: That wide, open country that I love; don't fence me in." Interesting, too, is how you are cooking on the road.

These skies are amazing! We love corn bread too,actually my recipe is almost identical,I found it in an American recipe book years ago. I like that it's so simple to make.

Great pictures of the prairies. I've never seen a crock pot like that one before and it would be great for making things like the cornbread. It looks delicious. Safe travels.

Love the roadtrip scenery (being the roadtrip lover I am and with more of Canada being so high on my travel bucket list, how could I not.) Seriously never thought about Sask having badlands, but duh. We've been to the ones in the US, so .... (I am so ignorant about Geography it is pitiful for someone who traveled full time for all those years.)

Anyway, love the scenery and the cornbread, Oh gosh. We are big cornbread lovers and I'm going to try this. Years ago I blogged a story about how my father-in-law grew up on cornbread during the depression. He got to have sugar on it for his birthday cake. And yet, he still loved it years later. And so do we..

I made soup today and almost made cornbread! I've never tried it in the crockpot though, what a great idea.
